Basically anything written by Michiru Yamane is guaranteed to be good. She's one of the few video game composers who consistently makes me stop and listen to her work, particularly outside of the games her stuff appears on. Here's two of my favourites, amazingly she did them more or less back to back:
Castlevania: Curse of Darkness:
The Sword of Etheria:

Yeeessss this is sick. I love this super bombastic style that all these anime games seem to have. I know a lot of the Castlevania games just credit the soundtrack to "Castlevania Sound Team", but hers definitely have a distinct and influential style. After SotN I feel like this sound was everywhere. Never heard of Sword of Etheria, but those twin pinch harmonics around 2:20 are such an expert touch.

Another vote here for Defender Of The Crown. Would love to hear a contemporary DS take on this soundtrack. I missed a chance to meet the composer about 8-9 years ago when they were doing a performance at a local library :/ www.youtube.com/watch?v=idUbyYRVfIY

I've recently been playing Blood, a fantastic FPS made in the Build engine in 1997. I remember playing a shareware version at the time and enjoying it but I was WAY more into Quake. Anyway the soundtrack is PURE Dungeon Synth!

One of my favorite composers, regardless of genre, is Hitoshi Sakimoto. He's the man behind the OST's of the Ogre Battle/Tactics Ogre, Final Fantasy Tactics, and Valkyria Chronicles series, as well as Final Fantasy XII and Vagrant Story. Just to name the really big ones. Oh, and a special mention must go to the 'Bubble Ghost' song (Game Boy version)...if you've played that game all the way through you'll never be able to get that tune out of your head, ever again. I promise! ) Vagrant Story (PS1) is one of my favorite games of all time. A true masterwork. A dungeon crawler with an amazingly deep (for a console game anyway) weapon/item crafting and combat system. Story, script, characters, and artwork are all top notch. And the soundtrack has everything from bombastic and fully orchestrated to very atmospheric pieces that suck you into this (underground) world. The opening scene of the game features the song 'Climax of the Graylands Incident', which blew me away when I first played this game. And it still impresses me to this day. Part 1 Part 2 And some more atmospheric material

For anyone that has played the game, he will know how this music is a huge part of the experience: www.youtube.com/watch?v=j0-9udYcxOI&t=278sIt's probably my favourite game OST. Also, it's a nice playlist in the above video. Other good ones are Planescape Torment, first Gothic (really good! Old Camp theme!), and let's say... Dark Souls.

For me the most memorable game soundtracks are the 90's tracker stuff, f.ex. Jazz Jackrabbit 1 & 2, One Must Fall 2097, In Pursuit of Greed, Epic Pinball, Turrican 2 (Amiga), to mention some of the most notable ones.
Outside of tracker music, this one is really something what it comes to completing the atmosphere of the game:
Oh, and this classic:

Lots of excellent posts and games osts AND games, thumbs up to all later posts!! So, I wrote in the currently playing thread that I got me an Amiga 500 mini but eventually the C64 mini I got ordered also arrived (which is good ), so I'm feeling extra nostalgic and in retro mode lately.. Before anything let me say that I f love C64 its SID chip, it has been praised by many people and the (demo)scene, but still, it is worth even more praise if you're into it, awesomeness is the only word I can find.. So besides exploring the game library itself I was looking at reddit etc. for things I'd miss and other recommendations and I read that Tetris on C64 had a nice and different ost than the rest of the conversions (I'm used to Gameboy mono one, a classic btw) and indeed it is very good and very different than other versions :

The Huntsman theme from Lord of the Ring's Online: Enedwaith is one of my favorite older regions from the game, the region holds a mystical feeling that is almost eerie at times. The Huntsman this song belongs to is supposed to depict the Vala, Oromë. You can find his hidden enclave behind a curtain of foliage that magically separates when you enter.

Last summer I played through the good ol' Hexen from '95 (using GZdoom). Back when the game was released, I only had a demo version on a CD that came with PC Gamer magazine, and I remember I was completely blown away with the atmosphere and vibes it had. Some time later I had a copy of the full version too, but never got deeper into it then. Luckily I came across the game in GOG some years ago and last year I finally completed the whole thing. The visual aestethics are absolutely spot on, and a lot of DS moods in the OST as well, me thinks: PS. The 3rd song on Talvi - Kuurankajo EP '22 was actually Hexen inspired.
