These are all either "not dungeon synth but" and/or "not quite farm-related but" type projects, but perhaps it can be a good starting point - Countryside Views - Wholesome Family Farm - Covered Bridges - Hoarder of the Black Mill
To the best of my knowledge, the answer may just be that there are none... yet. Someone should start one!
The project Morbaersanger from Nevada, USA is really endearing - plenty of great field recordings and a beautiful wistfulness to the songs. It's a great mix of nostalgia and more rural/wandering music. I can't think of any other artists who've released an album like this one... Idk if this is really what you're looking, but this was recorded in an old country church and deliberately plays with the space and atmosphere so it could be an interesting if slightly off-piste addition to the list
Try Forest Hermit - Demo II, and Forest Walk on Acunthus. I’m relatively new to DS, but into this “rural” themed side of DS. Maybe not the comphy synth side so much as the forest synth or raw ambient side. I don’t want it particularly dark, not a huge metal fan, medieval is not my thing, definitely coming at this from the ambient music angle. But that doesn’t mean I don’t enjoy some more traditional DS. I say all of this not as a personal introduction, but just to let you know where I am coming from musically. That said, some of my favorites along this line of DS: Keys to Oneiria Anything on the Verdant Wisdom label Wandlimb Little Spells Sunken Grove Apothecarium Yearner Morbaersanger Of Antler and Oak Anything on the Acanthus label (especially Lichencloak, dying for side B, or a repress of the tape, or someone to sell me the tape…)
