I just go straight from the headphone jack on my synths to "line in" on my pc. If by "monitor output" you mean listen to what's coming out of the instrument in real time, the DAW should be able to do that with the same signal that is being recorded. I use "asio4all" with my DAW (Reaper) to help with latency.
I'm not sure I'm fully understanding your question though.

Depending on whether or not you do other projects, it might be worthwhile to invest in a simple USB audio interface, from which you could definitely record 1/4" input (or 1/8" with converter) and listen at the same time. This is advantageous because if your computer is slow and you're recording directly into it, you may get some latency that can make timing difficult.
Rereading your original post, it sounds like your computer only has a headphone output jack, which unless you've tested it and can say otherwise, will probably not also work for input. I've never used the type of adaptor you linked to, but based on the price I'm guessing it may be for, like, Skype at best and probably not a very good quality for actual audio recording.
